01Parador Casa da Ínsua cheese workshop

Cheese-making at an 18th-century manor house

Casa da Ínsua is an 18th-century manor house in Penalva do Castelo, about 25 km from Viseu, now run as a hotel, Parador Casa da Ínsua. The estate still makes its own Serra da Estrela cheese, the soft sheep’s-milk cheese of the mountains of central Portugal. On weekday mornings in the cheese season, it lets visitors into the dairy to take part.

The workshop is one of the few places where children can do more than watch. They get dressed like the cheesemakers, stand at the production line and see the process up close.

What happens in the cheese workshop

Everyone is given a visitor kit: a white coat, a hat, shoe covers and a mask. Children tend to love this part, since it makes them feel like part of the team rather than tourists.

The workshop starts between 09:30 and 10:00. The exact time depends on how the sheep’s milk curd is coming along that morning, which is a useful lesson in itself: cheese works to the milk’s timetable, not ours. Visitors then go onto the production line and see how the cheese is made. The hands-on part finishes at around 11:00.

After that, the group visits the three rooms where cheeses are matured and stored. Then you head outside to the sheepfold and the thistle field next to the dairy. Serra da Estrela cheese is traditionally set with thistle flowers rather than animal rennet, so the field is part of the recipe. It makes a good question to put to children: how can a flower help turn milk into cheese?

All in, the workshop takes between one and a half and two hours.

Ages, prices and group size

When checked in September 2026, the workshop cost €20 for adults and €10 for children aged 5 to 10. Children aged 4 and under can’t take part in the production line. The page doesn’t list a separate price for children over 10, so ask whether they pay the adult rate.

Groups need at least 4 and at most 10 people. For a family of four, that means you can book on your own; a small homeschool group of up to ten fits in one session.

When it runs

The cheese workshop runs from Monday to Friday, except public holidays, from November to May. That’s the Serra da Estrela cheese season, when the sheep are in milk. There’s no cheese workshop in summer, and none at weekends, so plan a weekday trip in winter or spring.

Book by phone on +351 232 642 222 or +351 232 640 110, or by email at casadainsua@parador.es.

Visiting the house and its museum

Casa da Ínsua itself is worth an hour. The visit covers the manor house and its museum rooms, with the original west façade, painted ceilings, the chapel and the terrace. The collection includes hunting and fishing tools made by Indigenous peoples of Brazil, and objects linked to Luís de Albuquerque, who governed Mato Grosso in Brazil from 1772 to 1788. Children studying the Portuguese in South America will find a direct link here.

The house is open every day from 09:00 to 12:30 and 14:00 to 17:30. When checked, an unguided ticket cost €3 and a guided ticket €8. Children up to 12 go free with an adult, and you get a map and guide booklet. Hotel guests and restaurant customers also go in free.

The jam workshop, all year round

If you can’t make the cheese season, Casa da Ínsua also runs a jam workshop all year, on weekdays except public holidays. Participants learn the history of jam-making and follow the process from picking the fruit to making the jam. The estate uses apples, including the local Bravo de Esmolfe variety, as well as raspberries, pumpkin, strawberries, pears and tomatoes.

When checked, it cost €15 for adults and €7.50 for ages 5 to 10, with no under-5s. Groups are 2 to 6 people, and you must book at least 7 days ahead. Each participant takes home a jar of jam and gets 10% off in the estate’s shop.

Other routes around the estate

Casa da Ínsua lists 25 themed routes, including the palace, the chapel, the gardens, and cheese, wine and olive oil. Book through Montebelo’s central reservations on +351 232 420 000. They’re available in Portuguese, Spanish and English.

Good to know

This is an early start. With a 09:30 to 10:00 start in a village near Viseu, it works best if you’re staying nearby. The dairy has hygiene rules, which is why everyone wears the kit, and very young children can’t go on the line. If you have a toddler as well as older children, one adult may need to stay out with the little one.

The cheese dairy is a working space, so it’s calmer and more practical than a playful museum. Children who are happy to follow instructions will get the most from it. The pages don’t describe step-free access in the dairy, so ask when you book if you need it.

Making a day of it

Casa da Ínsua sits in the Dão wine and Serra da Estrela cheese country around Viseu. Casa das Palmeiras near Mangualde is a teaching farm with ponies and animal feeding, and runs a cheese activity from April to October, so between the two you can cover most of the year. Quinta da Estaca near Nelas lets children milk sheep from November to May. On a rainy day, the Museu do Caramulo has classic cars west of Viseu.

11Learning along the way

Before, during and after

  1. Before you go

Warm some milk with a squeeze of lemon juice and watch it split into curds and whey. Ask what the cheesemakers might use instead of lemon.

  2. On the day

Look at the thistle field and ask how a flower can help make cheese. In the maturing rooms, compare young and older cheeses.

  3. Back home

Taste a Serra da Estrela cheese at home and describe it together. Draw the journey from sheep to cheese in four pictures.
